Aylon Steinhart

Aylon Steinhart is the Founder and CEO of Eclipse Foods, a food technology company based in the San Francisco Bay Area, California. Under his leadership, the Y Combinator-backed startup has raised over $60 million in total funding, including a $40 million Series B round in 2022 to scale its plant-based dairy platform and expand national retail distribution. Steinhart also facilitated a nationwide commercial partnership with Smashburger to launch the restaurant chain's first plant-based milkshakes. Previously, he worked at the Good Food Institute, where he incubated dozens of alternative protein startups and advised major corporate partners such as Nestlé and Kellogg’s. He graduated cum laude from the Haas School of Business at UC Berkeley. Steinhart currently focuses on commercializing sustainable, micelle-based alternative proteins to transform the conventional $500 billion dairy and consumer packaged goods industry.
